I decided to also keep it simple for lunch on the first day. Along with the breakfast shake Nacho’s or Taco Salad is also something that we eat a lot. It was so simple to turn Nachos into Not chos that I can’t imagine anyone not wanting to try it!
Whole grain tortilla chips
Vegetarian refried beans
one whole tomato diced
Heat the refried beans. Place a layer of tortilla chips on a plate and top with the warm beans. Top the beans with shredded lettuce, diced tomato, avocado, cilantro, and shredded rice cheese.
Another very simple vegan meal. If you have never tried rice cheese, this stuff is AMAZING! It tastes just like, if not even better than real cheese but has no fat and no cholesterol! nom nom
